Quercetin, a compound commonly found in the immature flower buds of the caper bush (Capparis Spinosa), has been shown to activate proteins required for normal human brain and heart activity. Probably best known in the United States for being the perfect garnish to smoked salmon and cream cheese bagels, capers are the richest natural source for quercetin.
